Salmon

Wild Pacific salmon carries the pure taste of British Columbia, shaped by its journey from mountain streams to the open ocean and back again. This remarkable migration creates a rich, vibrant flavour that reflects the lifeblood of the region’s ecosystem and its deep cultural roots.

Bison

Once on the brink of disappearance, bison now roam British Columbia again in small, carefully managed herds. Their deep, earthy flavor reflects the open grasslands they help restore and the cultural significance they hold for Indigenous communities.
